Choosing the right Iranian pistachio depends on what you value — size, flavor intensity, shell openness, or culinary use. Here is what each variety offers:

Ahmad Aghaei Pistachios — the most popular pistachio in Iran and internationally. An elongated, finger-shaped nut with a naturally split shell, making it easy to open by hand. Ahmad Aghaei is celebrated for its balanced flavor — not too sweet, not too salty — and its consistent size. Available raw (no salt), naturally roasted, lemon-roasted, and saffron-roasted from Hosseini Nuts. From €44/kg.

Akbari Pistachios — the largest Iranian pistachio variety, with a distinctively elongated shell and generous kernel. Akbari is the premium choice for gifts and occasions — its size and visual presence make it the pistachio you serve at Nowruz, weddings, and formal gatherings. Fandoghi Pistachios — the classic round pistachio, smaller than Ahmad Aghaei and Akbari but with a concentrated, intensely nutty flavor that many pistachio connoisseurs prefer.

Fandoghi is the most widely cultivated pistachio in Iran and the one most commonly used in Persian cooking — rice dishes, sweets, and baklava. Also available saffron-roasted from Gharbad. From €25/500g.

Kaleh Ghouchi Pistachios — also known as jumbo pistachios, Kaleh Ghouchi is a large round variety with a wide-open shell and a rich, buttery flavor. Slightly rarer than the others, it is prized for snacking and makes an impressive gift. Available roasted and salted from Hosseini Nuts. From €48/kg.

Saffron-Roasted Pistachios — A Persian Specialty
